Recipe: Tomato-less Chili


How to make chili without tomatoes?  A difficult question.  With one of the most basic ingredients off the list it was time to breakout the allergy free chemistry kit.  Beef is okay, onions are okay and beans are fine… so where do we go from there?  How much can we do with spices and sauces?

The answer, in this case, came in the form of seasonings.  Looking for chili favor?  Chili powder is a good place to start.


  • 1 Lbs Ground Beef
  • 2 Large Onions (Chopped)
  • 1 Tbsp Chopped Garlic
  • 1 Tbsp Olive Oil
  • 1 Can Chili Beans (Drained and Rinsed)
  • 1 Cup Chicken Stock
  • 1/4 Cup Chipotle Sauce
  • 2 Tbsp Corn Starch
  • 1 Tbsp Gluten Free Liquid Smoke
  • 1 Tbsp Agave
  • 6 Tsp Chili Powder

In a large pot, saute onions and garlic in olive oil until the onions soften.  You don’t need the onions to be totally soft, so keep an eye on them.  Add the beef and brown the meat with the onions.

In a large measuring cup combine the stock, chipotle, liquid smoke and corn starch.  Add the mixture to the pot with the beans and stir thoroughly.  Add the agave and chili powder and cook over a low heat.
