For the past week or so, our blog will be featuring our entries into the So Delicious Dairy Free 3-Course Recipe Contest. We’ve finally reached the dessert round! D is a big fan of rice pudding and creamy desserts and it seemed that So Delicious products would be the perfect compliment to creating a thick and creamy rice pudding. Yet rice pudding alone didn’t seem special enough for the 3-Course Contest so we decided to go out to the local Asian market for some inspiration. The final result is a delicious, fragrant and pretty dessert.
Bring the rice and water to a boil in a medium covered pot and reduce heat. Allow the rice to simmer until the water is absorbed. Set the rice aside to cool off the heat while you prepare the other ingredients.
Using a blender or shaker, mix the remaining products thoroughly. It should look like a Pistachio Ice Cream milk shake. Mix the liquid into the cooked and cooled rice. Chill for 30 minutes prior to serving.
