Contest Entry: Hot Wings with Dairy Free Blue Cheese Dressing

So-Delicious-Dairy-Free-3-Course-Recipe-Contest-BadgeFor the next week or so, our blog will be featuring our entries into the So Delicious Dairy Free 3-Course Recipe Contest.  This second recipe is also an appetizer, Hot Wings with Dairy Free Blue Cheese Dressing. We love hot wings, who doesn’t?  The recipe below is a fantastic way of cooking wings easily and healthily.  Our issue is more that the delicious blue cheese dressing is a little hard to recreate in a Dairy Free way.  Our second appetizer entry seems to have solved that issue for us.

Ingredients:

  • 6 Chicken Wings (Cut into wingettes and drumettes)
  • 2 Tbsp Frank’s Red Hot Sauce
  • 1/4 Cup Salt

Sauce:

Boil the chicken wings in heavily salted water.  Once the chicken has cooked through, remove the pieces and set them aside.  Pre-heat the oven to 400 degrees.

In a small sauce pan, combine the coconut creamer, the corn starch and the seasoingings.  Whisk together over medium heat until combined.  Add the Daiya cheese slowly, allowing it to melt into the mixture.  Remove from heat and allow to cool.

On parchment paper, lay out the chicken wings and place in the oven.  After twenty minutes, flip the wings and cook for an additional twenty minutes.  Remove from the oven and toss wings with hot sauce.  Serve with the dressing for dipping.
