Some nights we’re just too tired to cook. This Friday happened to be one of those nights (I did not want leftovers!). D and I happen to be in love with a couple of products from Trader Joe’s that make nights like these super easy. If I were to tell you that I made Rosemary Chicken, Mashed Sweet Potatoes and Brussels Sprouts you might have expected that I spent over an hour in the kitchen. All things considered, the meal only took thirty minutes to cook.
D and I happen to love sweet potatoes. Sadly, we don’t always have the patience to roast and mash them. Trader Joe’s has this product and the only ingredient is sweet potatoes! The mashed sweet potatoes are frozen into ice cube sized pieces making it easy to create individual portions. We prepare ours on the stovetop but using the microwave is also possible. A healthy and quick side dish like this is a godsend if your trying to cook complete meals with limited time. The package says it contains six portions but by standards on American sized dinner plates it’s more like three.
Trader Joe’s Roasted Mashed Sweet Potatoes

This is by far our favorite product at Trader Joe’s. Trader Joe’s takes uncooked leg and thigh portions of chicken and add rosemary and olive oil. All I have to do is take the bag out of the freezer and soak in warm water for about twenty minutes and then put in the oven (sometimes we take this out the night before and let it defrost to make cooking it even faster!). The skin cooks up crispy and the chicken is moist. The sad part here, is that Trader Joe’s discontinued this particular product. We’ve made something similar on our own but there is something wonderful about having something ready to cook, right out of the freezer. We hope it comes back to the shelves after the holidays. Each package contains two leg quarters.
Bonus Tip: Baking the chicken on top of parchment paper greatly saves on cleanup and hassle.
Trader Joe’s Rosemary Chicken
Ingredients: Chicken Leg, Garlic Clove, Salt, Olive Oil, Fresh Rosemary, Sugar and Ground White Pepper
Brussels Sprouts, or Turtle Heads (As D’s mother calls them) are not for everyone. They are a healthy green vegetables and we happen to like them. These Trader Joe’s brussels sprouts are found in the frozen section. Brussels sprouts are highly underrated and when cooked the right way they are super tasty! They microwave in 5-6 minutes and are not spongy and overcooked. We use these in a few different recipes (including one with bacon that we will share in the future!).

Put it together and it is a quick, simple, and more importantly, easy meal!
D’s Review: I think that the Mashed Potatoes are a huge hit and I’ll never turn down crispy chicken skin. This was a delicious meal and it was wonderful to come home to.
